Easy Red Velvet Cake Mix Cookies Recipe

  Indulge Your Sweet Tooth with these Easy red velvet cake mix cookies. My red velvet cookie recipe only requires 3  simple ingredients and a box of cake mix.  It’s the perfect treat that is a breeze to make. 

  

 

Whether you’re a baking novice or a seasoned pro, these cookies will surely become a favorite in your dessert recipe box!  And yes it’s true, I still have my mom’s and my own recipe box that I still use. You can read about my mom’s handwritten recipe I transferred onto a cutting board here.

Ingredients:

1 box red velvet cake mix (use your favorite red velvet cake mix, I like Duncan Hines)
2 eggs
½ cup vegetable oil
1 cup white chocolate chips
Powdered sugar for dusting (optional)

Instructions:

Preheat the oven to 350 degrees. Use parchment paper to line your baking sheet(s) and set aside. This ensures that your cookies won’t stick and makes for easy cleanup.

In the bowl of a stand mixer, or a large mixing bowl if you’re using an electric mixer, combine cake mix, eggs, and oil.  Mix until thoroughly combined and soft and a uniform dough forms.

Add in the white chocolate chips and fold in by hand until completely mixed in throughout the dough.  

 

Use a small ice cream scoop to portion out the cookie dough and roll it into individual balls. Place on the prepared baking sheet at least two inches apart, leaving enough space between each to allow for spreading during baking.

  • Bake in the preheated oven for 10-12 minutes or until the edges are just slightly browned. Keep an eye on them to prevent over-baking, as these are chewy cookies and are best when they’re soft on the inside.
  • Once baked, let the cookies cool on the cookie sheet for a few minutes before transferring them to a wire rack until room temperature.

    Options

    Have fun with all the different flavor combinations – any boxed cake mixes will work! Pumpkin cake mix cookies would be perfect for fall and chocolate mint cookies during the holidays!

    Turn them into sandwich cookies using cream cheese frosting in the middle.

    Sprinkle with Powdered sugar or cocoa powder for dusting and an extra touch of sweetness.

    Use white chocolate drizzle on the top of the cookies.

    Have fun using your favorite mix-ins; chocolate chips,  M&M’s, Oreo pieces, Reese’s pieces, etc

Storage:

 Cookies can be stored in an airtight container for up to 4-5 days, they are the most fresh for up to 3 days.
Frozen for 3 months.
