Healthy Keto Tuna Cucumber Bites 

These Keto Tuna Cucumber Bites are healthy and delicious and make the perfect appetizer or mid-day snack!  I love the refreshing taste of the cucumber and it takes less than 15 minutes to prepare. Instead of bread, which is packed with carbs, were using cucumbers mixed with tuna, avocado mayo, and dill. The ultimate guilt-free snack, I hope you enjoy!

You will notice that this recipe uses avocado oil.  Unlike traditional mayonnaise, which uses soybean oil and contains added sugars, avocado mayonnaise uses good, healthy fats and delivers antioxidants.  I’m so grateful we have a neighbor with an avocado tree that makes home deliveries about once a week!  If you’re not feeling the avocado mayo, you absolutely can make this recipe using regular mayo.

Makes 2-4

Ingredients:

1 large cucumber
1 – 4oz can of tuna
¼ cup avocado mayonnaise
Fresh dill for garnish
Optional: Salt and Pepper

 

 

Directions:

 

  1. Cut the cucumber in half lengthwise, and scoop the seeds out with a spoon.
  2. Combine the tuna and mayonnaise in a small bowl, and stir well. You may add some fresh dill here, or just opt to use it as a garnish.
  3. Fill each cucumber half with the mixture, and sprinkle some fresh dill on top.
  4. *Optional: Cut each stuffed cucumber in half.

So simple and so delicious!

If you are headed to a gathering, you can easily make these ahead of time and store them in the fridge.  You can cut these up into smaller bites as well.

Tip: If you want to spice it up a bit, add a little bit of chili powder or cayenne pepper to really make the flavors pop.

Ingredients
  

  • 1 Large cucumber
  • 1 4oz can of tuna
  • 1/4 cup Cup avocado mayonnaise
  • Fresh dill for garnish
  • Optional Salt and Pepper

  • Fill each cucumber half with the mixture, and sprinkle some fresh dill on top.
