Red Velvet Cookies using a box cake mix

Ingredients
  

  • 1 Box Red velvet cake mix
  • 2 Eggs
  • 1/2 Cup Vegetable oil
  • 1 Cup White chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees. Use parchment paper to line your baking sheet(s) and set aside. 
  • In a large bowl, combine cake mix, eggs, and oil.  Mix until thoroughly combined and soft, uniform dough forms
  • Add in the white chocolate chips and fold in by hand until completely mixed in throughout the dough.
  •  Use a small ice cream scoop to portion out the cookie dough and roll it into individual balls. Place on the prepared baking sheet at least two inches apart, leaving enough space between each to allow for spreading during baking
  • Bake in the preheated oven for 10-12 minutes or until the edges are just slightly browned.
  • Once baked, let the cookies cool on the cookie sheet for a few minutes before transferring them to a wire rack until room temperature.
