Sesame Shrimp over rice with snap peas

Do these 5 words sound familiar and drive you nuts; I’m hungry, what’s for dinner? I am on the recieving end of these words everyday times 3.  I have put one thing on my Birthday and Christmas wish list every year for the past 10 years but for some odd reason my request for a live-in chef has not been granted.  I really do try my best and I enjoy cooking but somedays there is just not enough time for meal planning and I fall short.  Sadly that means the pizza man gets called.

I have gone back and forth on meal planning simply because of the time that is involved. I have secretly wished someone would just hand me a menu plan filled with delicious recipes every week and now I have it thanks to emeals.  They plan my weekly meals and send me a grocery list. Sesame Shrimp over Rice

1⁄4 c soy sauce
1⁄2 t garlic powder
1⁄4 t lemon pepper
4 T sesame oil – divided
1 lemon for 4 t juice
1 – 1 1⁄2 lbs shrimp, peeled & deveined
Hot cooked rice
2 T sesame seeds, toasted

In a zip top bag, mix soy sauce, garlic powder, lemon pepper; 2 T oil, and lemon juice. Add shrimp. Seal and turn to coat, refrigerate for 30 minutes. Drain & discard marinade. In skillet, sauté shrimp in remaining 2 T oil until shrimp turns pink, about 3 to 5 minutes. Serve over hot rice and sprinkle with toasted sesame seeds.

The sugar snap peas were equally delicious and easy to make. In a large nonstick skillet or wok, saute the peas in sesame oil until crisp-tender. Add soy sauce and saute 1 minute longer. Sprinkle with sesame seeds.  Easy Peasy!

  2. You are so funny. I love to cook and I still need a chef for school lunches & week nights. I prefer to cook with a glass of vino, so that limits my cooking time girl! The peas sound so easy. I always see them, but never knew how easy it would be. Thanks…pinning!
